Everything Bagel Stuffing

The Man LOVES LOVES LOVES Everything Bagels... and I LOVE LOVE LOVE Stuffing, so when I ran across this recipe, I thought, this is the best of both worlds, and boy howdy, was I right. So yummy!


Ingredient List:

6 Tablespoons Butter

1 Large Red Onion (I only had 1/2, so I only used 1/2)

5 stalks of Scallions (Sliced, white and green parts separated)

Kosher Salt

Freshly Ground Black Pepper

2 Tablespoons Chopped Chives, plus 2 teaspoons for garnish

3 Garlic Cloves (minced)

1 1/2-2 Cups Chicken Broth (depending on the size of your bagels)

2 large eggs

2 Tablespoons Capers (optional)

5 Large Day-Old Everything Bagels (split, and cut into 8ths)


  1. Preheat oven to 375 degrees.

  2. In a 3.5 Quart braiser over medium heat, melt butter.

  3. Add the onions and scallion whites.

  4. Season with salt and pepper.

  5. Cook until soft, 5-7 minutes.

  6. Add the chives, garlic and scallion greens.

  7. Cook 2 more minutes.

  8. Remove from heat and set aside.

  9. In a large mixing bowl, whisk together chicken broth and eggs.

  10. Add capers (if using), bagels and onion/butter mixture.

  11. Fold to combine.

  12. Add additional chicken broth if necessary. (Bread should be well hydrated, but not mushy).

  13. Return stuffing to braiser.

  14. Bake 30 minutes (or longer if you want more browning on top).

  15. Remove from oven.

  16. Garnish with remaining chives.
