This is one of those recipes that is AMAZING when it's fresh, but it gets super sticky and gloppy as leftovers, so I suggest you eat it all!

I doubled most of the ingredients in the original recipe because I like my enchiladas FAT. Oh, who are we kidding, I just like enchiladas.
