This super easy casserole type dish has layers of pillowy tortillas, shredded cheese, ground beef, and salsa. And, it's a relatively quick dinner for those busy weeknights. Plus, the leftovers are even better.
1 lb lean Ground Beef
1 cup Yellow Onion (diced)
1 oz Mild Taco Seasoning
1 cup Mild Rotel (drained)
1 cup mild Chunky Salsa
9 small Flour Tortillas (or GF Tortillas)
3 cups shredded Mozzarella & Cheddar Cheese blend
1/2 cup Green Onions (chopped)
1/2 cup mild Rotel (drained)
1/4 cup Green Onions (chopped)
Preheat oven to 400 degrees
Put ground beef into a large saute pan over medium-high heat.
Add onion to the pan with the ground beef while it's cooking.
Crumble the ground beef well.
When the ground beef is fully cooked, add the taco seasoning to the pan.
Stir until all the ground beef is coated in the seasoning.
Add the Rotel and Salsa to the pan and stir well again.
Cut the flour tortillas into quarters.
Line the bottom of a greased 9x13 baking dish with 1/3 of the tortilla pieces.
Spoon half the ground beef and salsa mixture on top of the tortilla pieces and spread evenly.
Sprinkle 1 cup of shredded cheese on top of the meat mixture.
Sprinkle 1/4 of the green onions on top of the cheese.
Place another 1/3 of the tortilla pieces on top.
Spoon the remaining ground beef and salsa mixture on top and spread evenly.
Sprinkle with 1 cup of shredded cheese and 1/4 cup of green onions.
Place the remaining 1/3 of the tortilla pieces on top.
Sprinkle with the remaining cup of cheese.
Sprinkle with 1/2 cup Rotel and 1/4 cup of chopped green onions.
Place the dish in the oven and bake until the cheese on top is fully melted and just starting to brown, 18-20 minutes.
