One-Pan Ham & Cheese Tortellini
This super creamy one-pan dish makes for a quick, family-friendly weeknight meal.
1 tablespoon Olive Oil
1 small Onion
2 cloves Garlic (minced)
2 cups Ham (diced)
1 20oz package of frozen Cheese Tortellini
1 3/4 cups Chicken Broth
1/2 cup Heavy Cream
1 1/2 cups Mozzarella Cheese (shredded)
1/4 cup Parmesan Cheese (shredded)
Fresh Chopped Parsley
Heat Olive Oil in a large, oven-safe skillet over medium heat.
Add Onion, and cook till softened.
Add diced Ham and Garlic.
Cook for several minutes, until browned.
Add Chicken Broth, Tortellini, and Heavy Cream.
Stir to combine and bring to a boil.
Cook for 8-10 minutes or until most of the liquid is combined and the tortellini is tender.
Meanwhile, heat the broiler in your oven (place the rack in the center of your oven).
Remove the skillet from heat.
Stir in half the Mozzarella and all the Parmesan cheese till melted.
Top with remaining Mozzarella.
Place under broiler for 3-5 minutes, until golden and bubbly.
Garnish with parsley and serve immediately.
