This Nectarine and Blueberry Galette is both rustic and elegant. And did I mention it's also super easy??
1 sheet Frozen Puff Pastry
4 Nectarines (sliced)
3/4 cup Fresh Blueberries
1/2 cup Sugar
1 tablespoon Cornstarch
1/8 teaspoon Salt
1 large Egg
2 teaspoons Water
1 tablespoon Sugar in the Raw (or other large grain sugar)
Preheat oven to 400°.
Line a baking sheet with parchment paper.
In a large bowl, mix Nectarines, Blueberries, Sugar, Cornstarch, and Salt.
Stir gently to combine and coat the fruit.
Unfold Puff Pastry on a lightly flowered surface.
Roll Puff Pastry to desired size, or until the seams are smooth. (I didn't roll mine that much).
Transfer Puff Pastry to the prepared baking sheet.
Pour the fruit mixture into the middle of the Puff Pastry.
Fold up the sides of Puff Pastry till you've formed a bowl around the fruit mixture. Securing all seams to prevent leakage.
In a small bowl, combine Egg and Water.
Brush Egg Wash onto Puff Pastry.
Sprinkle wet Egg Wash with Sugar in the Raw.
Bake in preheated oven for 40 minutes.
