I had never seen a custard pie with a crumble top before The Man asked his Mom to send this recipe. It's the one pie, I don't have to make myself, so I'm more than happy to let The Man have this pie whenever he wants it. In fact, we had it for Christmas (2021) dessert and it was a hit all across the board.
Custard Ingredients:
2 cups Sugar
1/2 c flour (or GF 1-1 baking mix)
1/4 teaspoon Ground Nutmeg
4 beaten Eggs
Combine all custard ingredients and set aside to rest for at least 1o minutes.
Crumble Topping Ingredients:
1/2 cup Butter or Butter Flavor Crisco
1/2 cup flour (or GF 1-1 baking mix)
1/2 cup Brown Sugar
1 teaspoon Cinnamon
1 1/2 cups Oatmeal (or GF Oatmeal)
Combine ingredients until crumbly.
6 cups Chopped Rhubarb -- (here's a neat trick... if your rhubarb isn't as red as you'd like, soak it in Grenadine for about 10 minutes. It won't affect the flavor, and will make your Rhubarb bright red).
Mix rhubarb and custard mixture together.
Pour into prepared pie shell.
Top with crumble topping.
Bake at 400 degrees for 50 minutes.
Yields 2x Deep Dish Pies
