Lamb Schwarma

I am definitely not an expert in Mediterranean cuisine, but the night I made this for dinner... The Man actually made noises while eating. He was incredibly enthusiastic about making this a regular on the menu rotation.

Ingredients List:

2 tablespoons Cumin

1 tablespoon Pepper

1 teaspoon Salt

1 pound Lamb Stew Meat (thinly sliced)

2 tablespoons Olive Oil

1 large White Onion (sliced)

1 bunch of green onions (chopped)

2 cloves Garlic (minced)

2 tablespoons Soy Sauce

2 tablespoons Dry Sherry

1 cup Cilantro (coarsely chopped)

  1. Place sliced Lamb in a bowl.

  2. Add Cumin, Pepper, and Salt.

  3. Mix thoroughly.

  4. Heat a large skillet or wok over high heat until hot.

  5. Add Olive Oil till heated.

  6. Add Onions.

  7. Cook and stir for about 2 minutes until the edges are translucent.

  8. Transfer Onions to a bowl.

  9. Add Lamb with spices to the skillet/wok; cook, stir until meat starts to brown, about 2 minutes.

  10. Add Green Onions, Garlic, Soy Sauce, and Sherry.

  11. Bring to simmer.

  12. Cook and stir 2 minutes more until lamb is cooked through.

  13. Add cooked Onions and stir to combine.

  14. Remove from heat.

Pack in Naan Bread, or Pita with salad greens, diced onions, and Tzatziki Sauce.
