I am definitely not an expert in Mediterranean cuisine, but the night I made this for dinner... The Man actually made noises while eating. He was incredibly enthusiastic about making this a regular on the menu rotation.

1 tablespoon Pepper
1 teaspoon Salt
1 pound Lamb Stew Meat (thinly sliced)
2 tablespoons Olive Oil
1 large White Onion (sliced)
1 bunch of green onions (chopped)
2 cloves Garlic (minced)
2 tablespoons Soy Sauce
2 tablespoons Dry Sherry
1 cup Cilantro (coarsely chopped)
Place sliced Lamb in a bowl.
Add Cumin, Pepper, and Salt.
Heat a large skillet or wok over high heat until hot.
Add Olive Oil till heated.
Cook and stir for about 2 minutes until the edges are translucent.
Transfer Onions to a bowl.
Add Lamb with spices to the skillet/wok; cook, stir until meat starts to brown, about 2 minutes.
Add Green Onions, Garlic, Soy Sauce, and Sherry.
Bring to simmer.
Cook and stir 2 minutes more until lamb is cooked through.
Add cooked Onions and stir to combine.
