We had a crazy cold snap where I live, so even though it's not raining, I made soup anyway. I paired it with garlic knots to soothe The Man, and even he said it had good flavor... even though it was soup.
Ingredients List
1 pound bulk Italian Sausage
1 tablespoon Olive Oil
1 cup Onion (chopped)
2-3 Garlic Cloves (minced)
8 cups Beef Broth
14.5 oz can Diced Tomatoes (do not drain)
8 oz can Tomato Sauce
3 carrots (diced)
2 small Zucchini (diced)
1 green Bell Pepper (diced)
2 large handfuls of fresh Spinach
1 teaspoon dry Italian Seasoning
1 teaspoon Salt
1 teaspoon Pepper
18-20 oz fresh Ravioli (flavor of your choice)
Brown Sausage in a large pot.
Add Broth, Onions, Garlic, Tomatoes, Carrots, Tomato Sauce, Zucchini, Bell Pepper, Italian Seasoning, Salt & Pepper.
Stir.
Bring to a boil, then reduce to a simmer for 30 minutes.
Stir in Ravioli.
Cook according to package directions.
Stir in spinach and cook till just wilted.
Turn off the heat and ladle into bowls.
