Harvest Stew

Some of you may know that The Man is not a big fan of soup. So, I try to make it as sparingly as I can. So, let's just say I was shocked and amazed when I made this soup and he went back for seconds. Guess that means it's a keeper. And the major upshot? It's super easy!


Ingredient List

Canola or Olive Oil

1 12oz package of Beef Smoked Sausage (sliced into circles) ((I doubled mine, cause The Man likes meat!))

1 Onion (diced)

1 teaspoon Italian Seasoning

1/4 teaspoon Paprika

1/2 teaspoon Black Pepper

Pinch of salt

2 cloves of Garlic (minced)

2 large Carrots (peeled and diced)

2 large Parsnips (peeled and diced) ((I do NOT peel my parsnips)

2 stalks Celery (diced)

6 baby Yellow Potatoes (cubed)

1/2 pound Butternut Squash (peeled and diced)

6 Cups Chicken Stock

1 Cup Kale (Chopped) ((I would have substituted Spinach, but I completely forgot lol)

1 Tablespoon Parsley (chopped) - this is an optional garnish


  1. Heat a large soup pot of medium-high heat.

  2. Drizzle in about 2 Tablespoons of oil.

  3. Once hot, add in Sausage.

  4. Cook in a single layer for 2-3 minutes, allowing sausage to brown and caramelize.

  5. Stir and flip, allowing the second side to brown and caramelize for an additional 2 minutes.

  6. Add in the onion.

  7. Stir to combine.

  8. Cook sausage and onion together for 3-4 minutes.

  9. Add Italian Seasoning, Paprika, Black Pepper, Pinch of Salt and Garlic.

  10. Stir to combine.

  11. Add Carrots, Parsnips, Celery, Potatoes & Butternut Squash.

  12. Stir to combine.

  13. Add Chicken Stock.

  14. Reduce heat to medium-low.

  15. Simmer uncovered 40 minutes.

  16. Turn off the heat.

  17. Check for seasoning.

  18. Add in Kale and Parsley.

  19. Stir to combine.
