Baked Sausages with Potatoes Vegetables & Gravy

This turned out so yummy, The Man asks for it now. Which he NEVER does!


Ingredient List:

Vegetables -

2 pounds Baby Potatoes (halved if larger than a golf ball)

3 Carrots (peeled and cut into 2" pieces)

1 Red Onion (Cut into 8 wedges)

2 Garlic Cloves (minced)

2 tablespoons Olive Oil

2 teaspoons dried Thyme

1 teaspoon dried Oregano

Salt and Pepper


Sausages -

8-10 Sausages (you're looking for about 1-1.5 pounds total)


Gravy -

2 tablespoons Melted Butter

2 1/2 tablespoons All Purpose Flour

2 cups broth (Beef or Chicken) - heated (in the microwave works fine)

Fresh Thyme


  1. Preheat oven to 390 degrees (conventional) or 250 degrees (convection)

  2. Place all vegetable ingredients in a large bowl.

    1. Toss to coat in Olive Oil and Herbs.

  3. Dump into a 9x13 baking dish and spread evenly.

  4. Add sausages to the same bowl the vegetables were just in.

    1. Toss to coat with Olive Oil and Herbs.

  5. Arrange Sausages on top of Vegetables.

  6. Make gravy in a 4-cup measuring cup, or large bowl.

    1. Add broth.

    2. Add butter.

    3. Microwave till broth is warmed, and butter is melted.

    4. Whisk in Flour.

  7. Pour gravy into the bottom of the 9x13 baking dish, NOT on top.

  8. Bake for 25 minutes.

  9. Turn sausages and bake for another 25 minutes until Sausages are browned and Potatoes are soft.


I added 8 oz of halved mushrooms to mine.
