Slow Cooker Chicken Ratatouille Stew

This healthy and hearty stew comes together in minutes. Throw it all in the slow cooker before you leave for work and forget about it till you get home. Serve it over some rice and you've got yourself a full meal.


Ingredients List:

6 Chicken Thighs (boneless, skinless)

1/4 cup Onion, (chopped)

2 cups Sweet Pepper (sliced)

2 cups Eggplant (chopped)

2 cups Zucchini (chopped)

4 cloves Garlic (crushed)

1 3/4 cup Diced Tomatoes

2 tablespoons Tomato Paste

1 cup Chicken Broth

1 teaspoon Salt

1/2 teaspoon Pepper

1 teaspoon Dried Basil

1/2 teaspoon Dried Thyme

1 teaspoon Onion Powder


  1. Add Onions and half the Tomatoes to the slow cooker.

  2. Add the remaining vegetables and nestle the chicken thighs on top.

  3. Add your garlic, spices, Better than Bouillon, Tomato Paste, and remaining tomatoes together and mix well.

  4. Pour the tomato mixture over the chicken and place the lid on top.

  5. Cook on low for 8 hours

  6. When done, shred. the chicken with two forks.

  7. Serve over rice.
