Polenta with Sausage and Peppers
Creamy polenta with tangy sausages, sweet bell peppers, and onions. A quick weeknight meal that the whole family will love.
1 tablespoon Olive Oil
8 links Sweet Italian Sausage
3 assorted Bell Peppers (sliced)
1 medium Onion (sliced)
3 cloves Garlic (sliced)
2 teaspoons Salt
1 cup Chicken Broth
2 tablespoons Balsamic Vinegar
Polenta (and all ingredients required for cooking)
Heat the Olive Oil in a large skillet over medium-high heat.
Add the Sausage and cook, turning, until browned on all sides.
Remove the Sausage to a plate.
Add the Bell Peppers and Onion to the pan.
Cook, stirring until Peppers are soft and the Onion starts to carmelize, 8-10 minutes.
Add the Garlic and 1/2 teaspoon Salt.
Cook for 1 more minute.
Add the Chicken Broth and Balsamic Vinegar to pan.
Cut Sausages on the diagonal.
Add Sausages and any accumulated juices from the plate back to the pan.
Reduce heat and simmer, partially covered until the Sausage is cooked through.
Meanwhile, make Polenta according to package directions.
Spoon Polenta onto a plate. Top with Sausage, Peppers, Onions and any extra sauce from the pan.
