Loaded Spanish Rice has quickly become one of The Man's favorite meals... because he knows that it will lead to one of our favorite meals. I should warn you, this recipe makes a TON of food. Don't be alarmed though, you'll use the leftovers for another recipe.
Ingredients List: 1 lb Hamburger (or Ground Sausage) 2 5.6oz Packages Knorr Spanish Rice Mix (I use this brand because you don't have to brown the Vermicelli first)
4 Bell Peppers (one of each color, or whatever you have on hand) 1 Medium Onion 1 6oz Can Olives 1 15.25oz Can Corn 1 14.5oz Can Diced Tomatoes 1 4oz Can Green Chilis
In a large soup pot, start browning hamburger.
While hamburger browns, chop peppers and onions into pieces roughly 1/2" x 1/2", and chop olives in half.
Drain fat from hamburger if needed.
Add peppers, onions, corn, tomatoes & green chilis to pot. Stir to combine. Cover and let cook for 5-8 minutes to soften vegetables.
Add Spanish Rice packets and water according to package directions.
Cook rice according to package directions.
Serve with shredded cheese and sour cream if desired.
