Ham, Egg & Cheese Roll-ups

I was looking around for some sort of quick, grab-and-go breakfast to serve a crowd before a workday at my Grandparent's house when I came across this little gem. Easy and satisfying, quick in the oven, and really versatile as far as stuffing goes. Give it a try! It'd also be great for meal-prepping.


Ingredients List:

6 Eggs whisked

Garlic Powder (to taste)

Salt & Pepper (to taste)

3 oz Baby Spinach (or so... I like spinach in my eggs, so I used more)

1/2 Cup Diced Tomatoes (I omitted these when I made this because my Dad doesn't like tomatoes)

3 Green Onions chopped (the white and the green parts)

1 Tablespoon Olive Oil

Shredded Cheese (of your choice)

Sliced Ham (I used Turkey Ham)


  1. In a large frying pan, saute onions in olive oil till they start getting shiny.

  2. Add spinach to pan and saute till wilted.

  3. Season eggs with Garlic Powder, Salt, and Pepper

  4. Add tomatoes to the pan, just to heat through.

  5. Add seasoned eggs and a good handful of shredded cheese to the pan.

  6. Cook, stirring frequently until eggs are done to your liking.

  7. Slice ham to approximately 1/4" thick slices. If using store-bought pre-sliced ham, stack pieces if needed to reach this thickness.

  8. Lay ham on a cutting board or plate, spoon egg filling into the center of slice, and roll.

  9. Place rolls into an ungreased 9x13 baking dish till you can't fit anymore.

  10. Broil for 5 minutes.

  11. Enjoy!

I doubled this recipe because I was feeding a crowd, so don't be alarmed if your recipe doesn't look like these pics. The list above is for a single batch.


Author's Note - I ate mine with half an English Muffin, and it totally hit the spot, but I'm wondering if these would be good with a little Country Gravy on the side... hmmm??
