I make this when I'm craving veggies and comfort food. The smooth chicken-flavored sauce is almost like gravy and pairs perfectly with white rice.
Ingredient List:
1 tablespoon Olive Oil
1 pound Chicken (I use Boneless Skinless Thighs)
1 medium Onion
4-6 cups Costco Normandy Blend Frozen Vegetables (I don't measure, just use about 1/3 of the bag)
2 cups Chicken Broth
1/3 cup Water
3 tablespoons Corn Starch
Cooked Rice (according to package directions)
Make Rice according to package directions.
Dice chicken into bite-size pieces.
Heat olive oil in a large skillet over medium heat.
Add chicken to hot oil and cook till no longer pink.
Add sliced onions (I like bit chunks to match the big veggies).
Stir till onions are just starting to turn translucent.
Add vegetables.
Cover, and allow vegetables to defrost and warm through.
Remove lid, and add Chicken Broth.
Bring to a boil.
In a separate container, combine Water and Corn Starch to make a slurry.
Add slurry slowly to boiling liquid, constantly stirring till you achieve your desired consistency. I usually go with a gravy consistency.
Note - if gravy doesn't have the level of flavor you want, stir in some powdered chicken bouillon.
