Crockpot Asian Beef with Sugar Peas

This recipe did not originally start out as a crockpot recipe, but whenever I'd make it stove-top as directed, the meat was always chewy, so I decided to convert it, and see what happened. It turned out GREAT! The sweetness of the sauce is always sort of a surprise for the tastebuds when I make this... but I highly recommend it.

Ingredients List:

For Sauce -

1/2 Cup Soy Sauce (Low Sodium or Tamari are acceptable as well)

5 Tablespoons Brown Sugar

6 Cloves of Garlic (Minced)

1/2 Teaspoon Ginger

2 Teaspoons Rice Vinegar

For Base -

15 oz Stringless Sugar Snap Peas

8 oz fresh Sliced Mushrooms

1 pound Beef (thinly sliced)

  1. Mix all sauce ingredients together in a crockpot.

  2. Add raw beef.

  3. Cook on low, 4 hours.

  4. Add mushrooms and peas.

  5. Cook on low an additional 2 hours.

  6. Serve over white rice.
