Crispy Home Fries

I made these as a breakfast-for-dinner kind of night when I was specifically looking for a meal that would NOT result in leftovers. I was SO happy with how they came out... super easy, so crispy, and seasoned just right.

Ingredients List:

3 Yukon Gold Potatoes

2 Tablespoons Cooking Oil

Seasoned Salt

  1. Scrub the potatoes under cool water.

  2. Puncture potatoes with a fork several times.

  3. Microwave potatoes for 9 minutes.

  4. Allow potatoes to cool till you can handle them.

  5. Heat a large skillet over medium-high heat.

  6. When the pan is hot, add Oil.

  7. Cut the potatoes into bite-size squares.

  8. Add to the hot oil in a single layer.

  9. Sprinkle with Seasoned Salt.

  10. Leave to crisp on the first side. 4-5 minutes. (Don't mess with them, too much movement and they won't brown.)

  11. When browned, flip the potatoes to brown the other side.

  12. Continue turning until you've browned all the sides you want to be browned.

  13. Remove from the frying pan.

  14. Serve with eggs and your favorite breakfast meat.
