For a German girl, I LOVES me some pasta... then again, who doesn't love Pasta? Dark meat chicken, veggies, and a creamy sauce top off some Angel Hair just perfect in this filling pasta twist.
1 Box Angel Hair pasta (or Whole Grain thin Spaghetti)
2 pounds boneless/skinless chicken thighs
2 cups Chicken Stock
1 cup Heavy Whipping Cream
2 cups-ish Cherry Tomatoes (cut in 1/2)
100z Bag Baby Spinach
Dice chicken into bite-size pieces and add to a non-stick skillet heated to medium-low. Brown chicken pieces till cooked.
While cooking chicken, boil pasta according to package directions, in salted water, in a separate pot.
Add stock and heavy whipping cream to skillet with chicken, continue to simmer till sauce thickens slightly. (I have actually had this thickening process require a cornstarch slurry of 3 Tablespoons Cornstarch and 6 Tablespoons of water mixed together well.)
Cut tomatoes in 1/2. Once the sauce has thickened, add tomatoes to the sauce. They just need to be in long enough to warm through,
Add spinach to the sauce, stirring gently till spinach wilts.
Serve finished sauce on a bed of pasta. Enjoy!
