Cabbage Soup

It's that nasty cold time of year... which means soup.


2 teaspoons Olive Oil

1 medium Onion (chopped)

4 Celery stalks (chopped)

4 Carrots (chopped)

6 cups Vegetable Broth

1 small head Cabbage

2 15oz cans Diced Tomatoes (WELL drained)

2 tablespoons Garlic & Herb seasoning

Salt & Pepper to taste


  1. Heat Olive Oil in a large soup pot over medium-high heat.

  2. Add Onion and sauté till they're translucent.

  3. Add celery and carrot.

  4. Cook for 5-8 minutes, till vegetables begin to soften.

  5. Add Broth.

  6. Bring to a boil.

  7. Add Cabbage.

  8. Boil cabbage till it's tender. 8-10 minutes.

  9. Remove from heat.

  10. Add Tomatoes, Garlic & Herb Seasoning.

  11. Stir to combine.

  12. Add Salt & Pepper to taste.

  13. Serve with bread of your choice.
