It's that nasty cold time of year... which means soup.
2 teaspoons Olive Oil
1 medium Onion (chopped)
4 Celery stalks (chopped)
4 Carrots (chopped)
6 cups Vegetable Broth
1 small head Cabbage
2 15oz cans Diced Tomatoes (WELL drained)
2 tablespoons Garlic & Herb seasoning
Salt & Pepper to taste
Heat Olive Oil in a large soup pot over medium-high heat.
Add Onion and sauté till they're translucent.
Add celery and carrot.
Cook for 5-8 minutes, till vegetables begin to soften.
Add Broth.
Bring to a boil.
Add Cabbage.
Boil cabbage till it's tender. 8-10 minutes.
Remove from heat.
Add Tomatoes, Garlic & Herb Seasoning.
Stir to combine.
Add Salt & Pepper to taste.
Serve with bread of your choice.
