Simple Wonton Soup
It's officially soup season, ya'll, and I'm so excited!! The Man? Not so much. Either way, Costco was advertising these yummy-sounding Mini Chicken and Cilantro Wontons and I went... Wonton Soup!
6 cups Chicken or Vegetable Broth
6 Green Onions (chopped)
3 medium Carrots (diced)
8oz Sliced Button Mushrooms
20-30 mini Wontons
2 15oz cans Whole or Diced Tomatoes (drained)
4 cups fresh Spinach
In a large soup pot, heat Broth to boil.
Add diced Carrots.
Boil for 10 minutes.
Add Green Onions and Mushrooms.
Bring Broth back to a boil.
Cook according to package directions.
Remove from heat.
Add Tomatoes and Spinach.
Stir till the Spinach is wilted.
Season with Salt and Pepper as needed.
