You can serve this easy Spanish Rice with all your favorite Mexican recipes. It's so quick and easy to put together.
Ingredients List
2 cups Long Grain White Rice
1 1/2 tablespoons Olive Oil
3/4 cup Onion (chopped)
2 cloves Garlic (minced)
2 1/2 cups Water (or broth)
1 teaspoon Salt
1 1/2 teaspoons Chili Powder
1 teaspoon Cumin
1/2 teaspoon Garlic Powder
1/2 teaspoon dried Oregano
8oz Tomato Sauce
Cilantro (fresh & chopped) - optional
In a fine mesh strainer, rinse the rice well and drain.
Set aside.
Using the Saute function, heat the Oil in the Instant Pot.
When hot, add the onion and sauté till softened. About 3 minutes.
Add the garlic and cook for 30 seconds.
Turn the Instant Pot off.
Pour in the water.
Scrape any bits that may be stuck to the bottom of the pot.
Add the Salt, Chili Powder, Cumin, Garlic Powder, Oregano, Tomato Sauce, and rinsed Rice.
Stir.
Close and lock the Instant Pot.
Set to High-Pressure Cook for 4 minutes.
When finished, let the pressure release naturally for 15 minutes.
After 15 minutes, release any remaining steam and open the Instant Pot.
Fluff rice with a fork and serve.
